Some say winter’s last new moon is the signal, but whatever it is, the days are warm, the nights frosty when the sap runs. Then, the sugar bush blossoms with spile and bucket. The snow is mellow beneath the gathering sled. The sweet maple smell mingles with wood smoke from the sugar house. And the cooking fire glows long after supper. Tapping time has always been like this.
